"eat from home" month

In an effort to save money (starting a new job next week and had to quit my bartending job, therefore reducing the amount of money in my pocket), I've decided to try to eat as many meals as possible from my cupboards/fridge. I started by cleaning the kitchen to see what expired and what I have to work with. I found that I buy a lot and then don't use it, so here goes....

yesterday's eats:
breakfast was banana nut cheerios and vanilla soymilk
lunch was a bowl of wolfgang puck chicken tortilla soup
dinner - spinach and blueberry salad with raspberry vinagarette and a small bowl of potato soup (it ended up being very salty so most of it went into the fridge for someone else to eat)
snacks included - banana with almond butter, blue corn chips and salsa...and other things, which I cannot remember right now

today I started off with a "nest egg" (cut a hole in a piece of toast and cook the egg in it), a glass of soymilk, and a small bowl of blueberries

at lunch, I didn't not eat at home. I was running errands with my mom and she bought me lunch at Subway...veggie sub and a fountain diet coke (I get strange cravings for fountain drinks)

dinner, which I just finished eating, was a MASSIVE spinach salad with chicken, feta, strawberries, the last of my blueberries, and raspberry vinegarette. I also had an amazing roll that was made with honey butter. I'm not normally crazy about rolls but this was SO GOOD!

I also had some snacks that I don't remember and later I am going to attempt to make a strawberry/mango smoothie for mamacita so I will probably have some of that.

In hindsight - I really need to buy a camera, not only will it help me remember what I ate (undocumented snacks) but it will also make this blog a little more exciting.


Oh, I also spent 30 minutes on the elliptical while my nephew was napping...good stuff!
